Vanilla Apple and Brie Bruschetta

January 29, 2012

What You Need

  • 1/2 Loaf of Walnut Bread
  • 4 Small Apples
  • 1 Vanilla Bean
  • 2 Tblsp Honey
  • 1 Tblsp Brown Sugar
  • 1 tsp Ginger powder
  • 1/2 cup of water
  • 1 pkt Trader Joes’s Goats Milk Brie
  • Butter as needed

How its done

  1. To make the Apple topping, dice the peeled and cored apples. Cut the Vanilla bean in half and scrape the inside and add to the apples.  Cook with the honey, brown sugar, water, ginger powder till the apple has softened.
  2. Cut the walnut bread into slices and lay on baking sheet
  3. Rub some butter on each slice and broil to toast the bread
  4. Distribute the apple topping among the slices and top with slices of brie. Broil for a few more minutes till the cheese is melted. Serve warm or at room temperature.

The nutty walnut bread topped with sweet apple and tangy brie is a great combination – a great appetizer for dinner or brunch parties!

    • Thanks, Shyam!!! I did think of making turnovers with puff pastry, but decided on the nutty walnut bread instead…turnovers would be yummy as well!
