Quick Chilaquiles

Its been such a long time since I updated this blog! Work’s been busy so there’s little time to try new things nowadays, not to mention that its ALL about quick meals now.  Last night, I made my version of Chilaquiles for dinner.  Chilaquiles are a Mexican dish where tortillas are cut up and fried, then simmered in salsa,scrambled eggs or chicken can be added, then topped with cheese.  Here’s my version:

What you need

  • 3 Tortillas
  • 1 Cup chopped zucchini
  • 1 Cup Traders’ Joes frozen soycutash
  • 1 Cup Salsa
  • 2 Cups of Sharp Cheddar cheese
  • 1 Tblsp of vegetable oil
  • Salt and pepper to taste

How its done

  1. Heat a non-stick pan and add the oil.¬† When the oil heats up, tear up the tortillas into bite size pieces and toss them into the oil.  Mix and heat through to crisp up a bit (2-3 minutes).
  2. Meanwhile, cook your vegetables in the microwave with a little bit of salt. (make sure you don’t overcook them and they still have their crunch).
  3. Add the vegetables and salsa to the tortillas in the pan and mix. Add salt to taste (remember, the salsal has salt and so does the cheese) and mix till heated through.
  4. Spray a baking dish with some cooking spray and put the mixture into it. Top with the cheese and broil till the cheese is bubbly.

This is a healthy, quick weeknight meal you can pull together in less than 30 minutes! Enjoy!

  1. This one seems really simple to make. Not sure if I have already mentioned but I am not big into Mexican cuisine, but this dish makes even my mouth water 🙂

      Good to hear from you! Been really busy with work, but hope to be able to blog more. Didn’t know you didn’t like Mexican food – this one is a very light version of the traditional chilaquiles- might convert you!
